Shambala’s specialized menu is geared towards international guests and the active, healthy lifestyle that the hotel promotes with its yoga, surf retreats, classes and natural spa. We also look to have a few alkaline oriented options in the menu because alkaline foods help improve the immune function, reduce inflammation, slow down aging, increase energy levels and prevents health issues by increasing your ph level.

Our chef Randy Siles, recently named the ambassador of the sustainable and healthy cuisine plan for Costa Rica, has a fusion style called “Author’s Cuisine,” which is a free-style way of cooking that lets him create original recipes from his imagination. Like an artist with a blank canvas, Siles skillfully creates gourmet art fusing flavors into delicious, fresh and healthy dishes that tantalize your taste buds.
As part of our philosophy we have put toguether our team by training young natives with dedication, motivation and hard work, despite the few opportunities for them in the area, creating a new sustainable option for the local community. Read full article
